Go to My Documents\Assetto Corsa\cfg and open "video.ini". Change the resolution to the one you would use if all monitors were the same (in my case 5760x1080). Save and exit this .ini. Open SRWE and leave in background. Open AC. Select a car and track in practice mode. At this point, you may or may not be able to access the "Start Session" button.
Those videos will explain that. Hardest part is getting the dedicated server to work for both of you. If you can get the server working with some base Assetto Corsa tracks and cars adding mods is simple. You just add them to the server like you would any other car and have the track you want to use selected.
Wasn't my point, but yeah I get what you're saying. My mates bring their laptops over and we play Assetto Corsa online in our own server, you just can't play split screen.
